Instant Pot Peach Pork BBQ Sliders with Apple Coleslaw

For the pork:
- 2½-3 lbs. pork roast or tenderloin
- 16 oz. barbecue sauce or use homemade
- 16 oz. peach salsa
- ½ cup chicken broth
- 12-16 slider buns
For the apple coleslaw:
- 16 oz. bag coleslaw mix
- ¼ cup chopped parsley
- 1 apple chopped
- ⅓ cup safflower oil
- 3 Tbs. vinegar
- 4 Tbs. honey
- salt & pepper to taste
For the homemade bbq sauce:
- 1½ cups ketchup
- ¼ cup yellow mustard
- ¼ cup honey or brown sugar
- salt to taste, optional
For the pork:
Put all ingredients in the pressure cooker.
Cook on high pressure for 40-44 minutes followed by a quick pressure release.
Shred cooked meat to serve
For the apple coleslaw:
Stir coleslaw mix, parsley and apple together.
Put the remaining ingredients in a container with a tight-fitting lid and give it a good shake to combine.
Pour dressing over slaw and toss.
Serve on whole wheat slider buns, or go bun-less, and serve the pork on top of the slaw.
