Ingredients

  • 1-1½ lbs. pork chops
  • ½ tsp. salt
  • pepper to taste
  • 1 small yellow onion finely diced
  • 2 cups peaches sliced, fresh or frozen
  • 2 Tbs. basil leaves packed fresh, or 1 Tbs. dried basil
  • 2 Tbs. balsamic vinegar
  • 1 clove garlic minced
  • 1 cup chicken broth

Instructions

  • Season the pork chops with salt and pepper and place in the Instant Pot.
  • Top with the diced onion, peaches, basil, vinegar, garlic, and chicken broth.
  • Set manual cook time for 8 minutes on high pressure.
  • Let the pressure release naturally for 10 minutes, then manually release any remaining pressure.
