Slow Cooker Pasta Sauce with Sausage and Eggplant

Ingredients

  • 14 oz. crushed tomatoes
  • 8 oz. pasta sauce
  • tsp. Italian seasoning
  • 1 clove garlic minced
  • ½ lb. Italian sausage links coin sliced
  • 1 small eggplant
  • ¼ cup parmesan cheese for serving

Instructions

  • Combine the crushed tomatoes, pasta sauce, Italian seasoning and minced garlic in the slow cooker.
  • Coin slice the sausage.
  • Peel and dice the eggplant.
  • Add both to the slow cooker and stir well to combine.
  • Cook on low for 6-8 hours.
