- 14 oz. crushed tomatoes
- 8 oz. pasta sauce
- 1½ tsp. Italian seasoning
- 1 clove garlic minced
- ½ lb. Italian sausage links coin sliced
- 1 small eggplant
- ¼ cup parmesan cheese for serving
Combine the crushed tomatoes, pasta sauce, Italian seasoning and minced garlic in the slow cooker.
Coin slice the sausage.
Peel and dice the eggplant.
Add both to the slow cooker and stir well to combine.
Cook on low for 6-8 hours.
