Ingredients

  • 28 oz. can crushed tomatoes
  • 16 oz. jar pasta sauce
  • 1 Tbs. Italian seasoning
  • 2 cloves garlic minced
  • 1 lb. Italian sausage links coin sliced
  • 1 large eggplant
  • ½ cup parmesan cheese for serving

Instructions

  • Combine the crushed tomatoes, pasta sauce, Italian seasoning and minced garlic in the pressure cooker.
  • Stir in the sliced sausage and diced eggplant.
  • Set cook time for 25 minutes.
  • Do a quick pressure release.
