Skillet Chicken, Peppers & Tomatoes - No Flour No Sugar Version

Ingredients

  • ¼ cup soy sauce
  • 2 Tbs. olive oil
  • 1 Tbs. white vinegar white wine vinegar
  • tsp. basil
  • tsp. oregano
  • ¾ lb. chicken tenders marinated
  • 1-2 Tbs. olive oil for cooking the chicken
  • 1 red pepper cut in strips
  • ½ onion sliced
  • 1 clove garlic crushed
  • ½ 15 oz. can stewed tomatoes with juice
  • salt and pepper to taste

Instructions

  • Whisk together the first 5 ingredients, pour over chicken, and refrigerate.
  • Let marinate for several hours or overnight.
  • Cook chicken in olive oil till done and browned.
  • Remove chicken from pan.
  • Add peppers, onion and garlic to pan and cook for several minutes.
  • Add stewed tomatoes to other veggies.
  • Return chicken to pan.
  • Season with salt and pepper.
