Skillet Chicken, Peppers & Tomatoes - No Flour No Sugar Version

- ¼ cup soy sauce
- 2 Tbs. olive oil
- 1 Tbs. white vinegar white wine vinegar
- ⅛ tsp. basil
- ⅛ tsp. oregano
- ¾ lb. chicken tenders marinated
- 1-2 Tbs. olive oil for cooking the chicken
- 1 red pepper cut in strips
- ½ onion sliced
- 1 clove garlic crushed
- ½ 15 oz. can stewed tomatoes with juice
- salt and pepper to taste
Whisk together the first 5 ingredients, pour over chicken, and refrigerate.
Let marinate for several hours or overnight.
Cook chicken in olive oil till done and browned.
Remove chicken from pan.
Add peppers, onion and garlic to pan and cook for several minutes.
Add stewed tomatoes to other veggies.
Return chicken to pan.
Season with salt and pepper.
