Instant Pot Mixed Bean (aka. Calico Bean) Soup

Ingredients

  • ½ lb. smoked sausage
  • ½ lb. mixed dry beans
  • ½ onion chopped
  • 1 clove garlic minced
  • ½ 15 oz. diced tomatoes undrained
  • 2 cups chicken broth
  • 1 cup water
  • salt to taste

Instructions

For the beans:

  • Rinse and pick through them to remove any little stones.
  • Soak them overnight or do a quick soak by covering them with boiling water for an hour or two.

For the soup:

  • Drain beans and put them in the pressure cooker pot.
  • Chop the onion, garlic and sausage and add to the pressure cooker pot along with the other ingredients.
  • Set the cook time for 10 minutes.
  • Let pressure release naturally for 10 minutes, then release remaining pressure.
