Instant Pot Maple Bacon Pork Loin

Ingredients

  • 1-1½ lbs. pork loin
  • ¼ lb. bacon
  • salt and pepper to taste
  • ¼ cup Maple syrup
  • 2 Tbs. Dijon mustard
  • 2 Tbs. vinegar
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
  • ½ cup chicken broth

Instructions

  • Lay the pork loin in the pressure cooker.
  • Lay the strips of bacon over the pork loin.
  • Season with salt and pepper.
  • Whisk together remaining ingredients and pour over the pork.
  • Set manual cook time for 8 minutes on high pressure.
  • Let the pressure release naturally for 10 minutes, then manually release any remaining pressure.
