Slow Cooker Korean BBQ Tacos

- 1½ lbs. boneless pork loin
- 4 oz. hoisin sauce
- 2 Tbs. soy sauce
- ⅓ cup honey
- ⅛ tsp. ginger
- 1 Tbs. lemon or lime juice
- 10 oz. bag of slaw mix or shredded cabbage for topping
Place pork in slow cooker.
Stir hoisin sauce, soy sauce, honey, ginger and lemon juice together.
Pour over pork.
Cook on high 5-6 hours or low 7-8 hours.
Shred meat with a fork.
Serve over brown rice or in tortillas, adding slaw mix as topping.
Any extra meat can be frozen for another time.
