Instant Pot Korean BBQ Tacos

Ingredients

  • 3 lbs. boneless pork loin
  • 8 oz. hoisin sauce
  • ¼ cup soy sauce
  • cup honey
  • ¼ tsp. ginger
  • 2 Tbs. lemon or lime juice
  • ½ cup chicken broth
  • 10 oz. bag slaw mix or shredded cabbage for topping

Instructions

  • Place pork in pressure cooker.
  • Stir hoisin sauce, soy sauce, honey, ginger, lemon juice, and chicken broth together.
  • Pour over pork.
  • Set manual cook time to 12 minutes on high pressure.
  • Let the pressure release naturally for 10 minutes, then release any remaining pressure.
  • Shred meat with a fork.
  • Serve over rice or in tortillas, adding slaw mix as topping.

Notes

Any extra meat can be frozen for another time.
