Ingredients

boneless pork loin

hoisin sauce

soy sauce

cup
honey

ginger

lemon
or lime juice

chicken broth

bag slaw mix
or shredded cabbage for topping
Instructions
Place pork in pressure cooker.
Stir hoisin sauce, soy sauce, honey, ginger, lemon juice, and chicken broth together.
Pour over pork.
Set manual cook time to 12 minutes on high pressure.
Let the pressure release naturally for 10 minutes, then release any remaining pressure.
Shred meat with a fork.
Serve over rice or in tortillas, adding slaw mix as topping.
Notes
Any extra meat can be frozen for another time.
