Slow Cooker Italian Sausage Pasta Sauce over Spaghetti Squash

Ingredients

  • ¾ lb. sweet Italian sausage links
  • ¼ cup water
  • 1 green pepper chopped
  • 1 small onion chopped
  • 2-3 cloves garlic crushed
  • 14 oz. can crushed tomatoes
  • 8 oz. can tomato sauce
  • tsp. oregano
  • tsp. basil
  • 1 tsp. thyme
  • salt & pepper to taste
  • 1 spaghetti squash cooked and scraped out

Instructions

  • Brown sausage links in a non-stick skillet.
  • Add water to the skillet and continue to cook sausage over medium heat for 5-7 minutes.
  • Remove sausage from skillet and slice into rounds – it’s okay if it’s not cooked all the way through, it will finish cooking in the slow cooker.
  • Add peppers, onion and garlic to the skillet and cook until its tender-crisp.
  • Put the sausage, veggies and remaining ingredients except the spaghetti squash into the slow cooker.
  • Cook on high for 4-5 hours or on low for 7-8 hours.
  • Serve over spaghetti squash.
