Slow Cooker Italian Sausage Pasta Sauce over Spaghetti Squash

- ¾ lb. sweet Italian sausage links
- ¼ cup water
- 1 green pepper chopped
- 1 small onion chopped
- 2-3 cloves garlic crushed
- 14 oz. can crushed tomatoes
- 8 oz. can tomato sauce
- 1½ tsp. oregano
- 1½ tsp. basil
- 1 tsp. thyme
- salt & pepper to taste
- 1 spaghetti squash cooked and scraped out
Brown sausage links in a non-stick skillet.
Add water to the skillet and continue to cook sausage over medium heat for 5-7 minutes.
Remove sausage from skillet and slice into rounds – it’s okay if it’s not cooked all the way through, it will finish cooking in the slow cooker.
Add peppers, onion and garlic to the skillet and cook until its tender-crisp.
Put the sausage, veggies and remaining ingredients except the spaghetti squash into the slow cooker.
Cook on high for 4-5 hours or on low for 7-8 hours.
Serve over spaghetti squash.
