Slow Cooker Italian Chicken with Tomatoes

- 1½-2 lbs. chicken breasts boneless
- 3 Tbs. olive oil
- 2 Tbs. red wine vinegar
- ½ tsp. oregano
- ½ tsp. basil
- 1 clove garlic crushed
- salt & pepper to taste
- ½ 15 oz. can petite diced tomatoes undrained
- ¼ cup Italian blend shredded cheese
Place chicken in shallow dish.
Whisk together all ingredients except tomatoes and cheese.
Pour marinade over chicken.
Refrigerate for 20-30 minutes or up to overnight.
Brown chicken in olive oil in a skillet over medium heat.
Place chicken in slow cooker.
Add tomatoes to skillet, stirring to scrape up browned bits.
Pour over chicken in slow cooker.
Cook on high for 5-6 hours or low for 7-8 hours.
Top with shredded cheese.
