Pork Chops, Sweet Potatoes, and Broccoli Sheet Pan Dinner

Ingredients

  • 2-4 Tbs. olive oil
  • 3-4 cups sweet potatoes chopped
  • 3-4 cups broccoli chopped
  • kosher salt
  • black pepper
  • 6-8 pork chops boneless, thin-cut

Instructions

  • Brush one large or two small rimmed baking sheets with olive oil.
  • Toss potatoes with a drizzle of olive oil, salt and pepper and add them to a section of the pan.
  • Toss broccoli with a drizzle of olive oil, salt and pepper and add them to a section of the pan.
  • Brush pork chops with olive oil and place in remaining space on the pan.
  • Sprinkle with salt and pepper.
  • Place in a 425° oven for 25-30 minutes, until the meat is cooked through and the potatoes are tender.
