Pork Chops, Sweet Potatoes, and Broccoli Sheet Pan Dinner

- 2-4 Tbs. olive oil
- 3-4 cups sweet potatoes chopped
- 3-4 cups broccoli chopped
- kosher salt
- black pepper
- 6-8 pork chops boneless, thin-cut
Brush one large or two small rimmed baking sheets with olive oil.
Toss potatoes with a drizzle of olive oil, salt and pepper and add them to a section of the pan.
Toss broccoli with a drizzle of olive oil, salt and pepper and add them to a section of the pan.
Brush pork chops with olive oil and place in remaining space on the pan.
Sprinkle with salt and pepper.
Place in a 425° oven for 25-30 minutes, until the meat is cooked through and the potatoes are tender.
