Oven Acorn Squash

Ingredients

  • 2 acorn squash medium
  • 2 Tbs. olive oil
  • salt and pepper to taste

Instructions

  • Preheat the oven to 375°.
  • Line a baking sheet with foil.
  • Cut the acorn squash in half, scoop out the seeds, brush with olive oil, and sprinkle with salt and pepper.
  • Place cut-side down on the baking sheet.
  • Bake for 45-55 minutes.
  • When cool enough to handle, scoop out and serve.
