Oven Acorn Squash

- 2 acorn squash medium
- 2 Tbs. olive oil
- salt and pepper to taste
Preheat the oven to 375°.
Line a baking sheet with foil.
Cut the acorn squash in half, scoop out the seeds, brush with olive oil, and sprinkle with salt and pepper.
Place cut-side down on the baking sheet.
Bake for 45-55 minutes.
When cool enough to handle, scoop out and serve.
