Instant Pot African Pulled Beef Sandwiches

Ingredients

For the sauce:

  • 5 oz. greek yogurt or sour cream
  • 1 cucumber small, peeled and diced
  • ¼ tsp. mint dried

For the pulled beef:

  • 1–1½ lb. chuck roast
  • 2-3 cloves garlic 1 whole and peeled, others crushed
  • ½ tsp. cumin
  • ¼ tsp. red pepper ground (cayenne)
  • tsp. allspice
  • 1 onion small, diced
  • ½ jalapeño seeds removed and diced
  • ½ 15 oz. diced petite tomatoes
  • ½ cup beef broth

Instructions

For the sauce:

  • Stir yogurt, cucumber and mint together.

For the pulled beef:

  • Cut one garlic clove in half and rub the roast all over with it.
  • Place all ingredients for the pulled beef in the Instant Pot and add ½ cup beef broth.
  • Set for 45 minutes cook time, followed by a quick pressure release.
  • Remove meat from the crock and shred with a fork.
  • Return meat to the cooker and stir to combine with juices from cooking the meat.
  • Serve the meat in pita bread with yogurt sauce.
