Ingredients

  • 32 oz. tomato juice
  • 5 cups water
  • 1 onion chopped
  • 4 potatoes chopped
  • 4 parsnips chopped
  • 4 carrots chopped
  • 1 green pepper chopped
  • 1 cup corn frozen
  • 1 cup peas frozen
  • 1 cup cut green beans frozen
  • 1 tsp. thyme
  • salt & pepper to taste

Instructions

  • Add the juice and water to the slow cooker and stir in the chopped veggies.
  • Cook on low for 7-8 hours or on high for 3-4, until veggies are tender.
  • Season with thyme, salt, and pepper.
