- 1-1¼ lbs. lean ground beef
- 1 small onion
- 1 small green pepper
- 2 cups beef broth
- ½ 14 oz. diced tomatoes
- 8 oz. tomato sauce
- 10-12 oz. frozen mixed vegetables
- ¼ cup barley
- 3 cups water
Brown the ground beef, onion and green pepper together.
Drain and rinse under hot water to remove the grease.
Place browned ground beef in a large soup pot and add all remaining ingredients.
Bring to a boil and then reduce heat and cover.
Simmer for 1 hour.
