Slow Cooker Green Chile Chicken Casserole

Ingredients

  • 1 lb. chicken cooked & shredded, or ½ rotisserie chicken, shredded
  • salt, pepper & cumin to taste
  • ½ 10 oz. cans cream of chicken soup
  • ½ 4 oz. cans chopped green chilies
  • ½ cup chicken broth
  • ½ cup sour cream
  • ½ cup Mexican blend cheese optional
  • ½ sleeve Ritz crackers crushed
  • 2 Tbs. butter melted

Instructions

  • Spray the crock of a slow cooker with non-stick spray.
  • Season the chicken and add in an even layer.
  • In a bowl, combine the soup, chilies, broth and sour cream and pour over the chicken.
  • Top with cheese and sprinkle with crackers.
  • Pour melted butter over.
  • Cook on low for 4-5 hours.
  • Vent the lid for the last 30 minutes to crisp the cracker topping.
