Slow Cooker Green Chile Chicken Casserole

- 2 lbs. chicken cooked & shredded, or 1 rotisserie chicken
- salt, pepper & cumin to taste
- 10 oz. can cream of chicken soup
- 4 oz. can chopped green chilies
- 1 cup chicken broth
- 1 cup sour cream
- 1 cup Mexican blend cheese optional
- 1 sleeve Ritz crackers crushed
- ¼ cup butter melted
Spray the crock of a slow cooker with non-stick spray.
Season the chicken and add in an even layer.
In a bowl, combine the soup, chilies, broth and sour cream and pour over the chicken.
Top with cheese and sprinkle with crackers.
Pour melted butter over top.
Cook on low for 4-5 hours.
Vent the lid for the last 30 minutes to crisp the cracker topping.
