Oven Green Chile Chicken Casserole

Ingredients

  • 1 lb. chicken cooked and shredded, or ½ rotisserie chicken, shredded
  • salt, pepper & cumin to taste
  • ½ 10 oz. can cream of chicken soup
  • ½ 4 oz. can chopped green chilies
  • ½ cup chicken broth
  • ½ cup sour cream
  • ½ cup Mexican blend cheese optional
  • ½ sleeve Ritz crackers crushed
  • 2 Tbs. butter melted

Instructions

  • Preheat oven to 350°. Spray a 9 x 9 dish lightly with cooking spray.
  • Add chicken to the casserole dish in an even layer.
  • In a mixing bowl, combine the cream of chicken, green chiles, chicken broth and sour cream.
  • Pour mixture over chicken and top with cheese if desired.
  • Sprinkle crushed crackers evenly over casserole.
  • Pour melted butter over the crackers.
  • Bake, uncovered, for 30 minutes
