Slow Cooker Curry Yogurt Chicken Thighs

Ingredients

  • lbs. boneless skinless chicken thighs
  • 1 yellow onion shredded or finely diced
  • ¼ cup lime juice about 2 limes
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 2 Tbs. curry powder
  • 1 cup plain Greek yogurt

Instructions

  • Place the chicken and onion in the slow cooker.
  • Whisk all other ingredients, except yogurt, together.
  • Pour over the chicken and turn to coat.
  • Cook on high for 3-4 hours or on low for 6-7 hours.
  • 30 minutes before serving, stir in the yogurt.
