Instant Pot Curry Yogurt Chicken Thighs

Ingredients

  • lbs. boneless skinless chicken thighs
  • 1 yellow onion shredded or finely diced
  • ¼ cup lime juice about 2 limes
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 2 Tbs. curry powder
  • 1 cup plain Greek yogurt
  • cup chicken broth

Instructions

  • Place the chicken and onion in the pressure cooker.
  • Whisk all other ingredients, except yogurt, together.
  • Pour over the chicken and turn to coat.
  • Set manual cook time to 10 minutes on high pressure, followed by a quick release.
  • Stir in yogurt and serve.
