Slow Cooker Chicken Tetrazzini

Ingredients

  • 3 cups chicken cooked
  • 8 oz. spaghetti noodles broken in half and cooked
  • 8 oz. sour cream
  • ½ cup chicken broth
  • 2 15 oz. cans cream of chicken or mushroom soup or use homemade
  • 1-2 cups mozzarella for topping

Instructions

  • Stir all ingredients together, except cheese.
  • Pour into greased slow cooker.
  • Cook on high for 5-6 hours or low 7-8 hours.
  • Top with cheese during the last 20 minutes of cooking.

Notes

Don’t want to use cream of chicken soup? Melt ½ cup butter in a pan. Whisk in ½ cup unbleached all-purpose flour and cook, whisking constantly, for a minute or two until golden. Slowly whisk in 1½ cup milk and 1½ cup chicken broth and bring to a boil, stirring frequently. Use this in place of the cream of chicken soup in the recipe.
