Slow Cooker Chicken Gyro Lettuce Wraps

Ingredients

For chicken gyro wraps:

  • ¼ cup olive oil
  • 2 Tbs. lemon juice
  • 2 cloves garlic crushed
  • 1 tsp. dried mint
  • 1 tsp. oregano
  • ½ tsp. black pepper
  • ¼ tsp. salt
  • 1 lb. chicken breast cut in strips
  • 1 head Bibb lettuce leaves

For cucumber sauce:

  • 1 small cucumber diced
  • 4 oz. plain Greek yogurt or sour cream
  • tsp. dried mint

Instructions

For cucumber sauce:

  • Stir cucumber, yogurt and mint together.

For chicken gyro wraps:

  • Mix oil, lemon juice, garlic, mint, oregano, salt, and pepper together in a small bowl.
  • Use a fork or small whisk to combine.
  • Place chicken in slow cooker.
  • Pour dressing over the top and stir to combine.
  • Cook on high for 5-6 hours or low for 7-8 hours.
  • Serve meat in lettuce leaves, topped with cucumber sauce.
