For chicken gyro wraps:
- ¼ cup olive oil
- 2 Tbs. lemon juice
- 2 cloves garlic crushed
- 1 tsp. dried mint
- 1 tsp. oregano
- ½ tsp. black pepper
- ¼ tsp. salt
- 1 cup water
- 1 lb. chicken breast cut in strips
- 1 head Bibb lettuce leaves
For cucumber sauce:
- 1 small cucumber diced
- 4 oz. plain Greek yogurt or sour cream
- ⅛ tsp. dried mint
For chicken gyro wraps:
Add 1 cup of water to oil, lemon juice, garlic, mint, oregano, salt, and pepper to a small bowl and whisk to combine.
Place chicken in the pressure cooker and pour dressing over.
Set manual cook time to 15 minutes on high pressure.
Let pressure release naturally for 10 minutes, then release remaining pressure.
Serve meat in lettuce leaves, topped with cucumber sauce.
