Ingredients

For chicken gyro wraps:

  • ¼ cup olive oil
  • 2 Tbs. lemon juice
  • 2 cloves garlic crushed
  • 1 tsp. dried mint
  • 1 tsp. oregano
  • ½ tsp. black pepper
  • ¼ tsp. salt
  • 1 cup water
  • 1 lb. chicken breast cut in strips
  • 1 head Bibb lettuce leaves

For cucumber sauce:

  • 1 small cucumber diced
  • 4 oz. plain Greek yogurt or sour cream
  • tsp. dried mint

Instructions

For cucumber sauce:

  • Stir cucumber, yogurt, and mint together.

For chicken gyro wraps:

  • Add 1 cup of water to oil, lemon juice, garlic, mint, oregano, salt, and pepper to a small bowl and whisk to combine.
  • Place chicken in the pressure cooker and pour dressing over.
  • Set manual cook time to 15 minutes on high pressure.
  • Let pressure release naturally for 10 minutes, then release remaining pressure.
  • Serve meat in lettuce leaves, topped with cucumber sauce.
