Slow Cooker Chicken Curry

- 1½-2 lbs. chicken thighs
- 1 small onion chopped
- ½ cup salsa
- 1½ Tbs. curry powder
- ½ 14 oz. can coconut milk unsweetened
- salt & pepper to taste
Put the chicken thighs at the bottom of the slow cooker.
Mix the chopped onion, salsa, curry, salt and pepper.
Pour the sauce mixture over the top and cook for 4 hours on high or 8 hours on low.
Remove chicken to a platter and add the coconut milk to the slow cooker and mix well.
Pour sauce over the chicken.
