Slow Cooker Chicken Curry

Ingredients

  • 1½-2 lbs. chicken thighs
  • 1 small onion chopped
  • ½ cup salsa
  • Tbs. curry powder
  • ½ 14 oz. can coconut milk unsweetened
  • salt & pepper to taste

Instructions

  • Put the chicken thighs at the bottom of the slow cooker.
  • Mix the chopped onion, salsa, curry, salt and pepper.
  • Pour the sauce mixture over the top and cook for 4 hours on high or 8 hours on low.
  • Remove chicken to a platter and add the coconut milk to the slow cooker and mix well.
  • Pour sauce over the chicken.
