Ingredients

  • 2 lbs. chicken tenders
  • 1 onion sliced
  • 1 green pepper sliced
  • 1 red pepper sliced
  • 28 oz. crushed tomatoes
  • 6 oz. can tomato paste
  • ½ cup red wine optional
  • 3 cloves garlic crushed
  • 1 tsp. oregano
  • ¾ tsp. basil
  • 1-2 bay leaves
  • salt & pepper to taste
  • 1 lb. whole-wheat pasta cooked

Instructions

  • Place chicken, pepper, and onion in the pressure cooker pot.
  • Combine remaining ingredients, except pasta, and pour over chicken.
  • Set cook time for 12 minutes, followed by a quick pressure release.
