Slow Cooker Chicken and Summer Vegetables

Ingredients

  • lbs. chicken breasts
  • 1 Tbs. olive oil
  • 1 Tbs. dijon mustard
  • salt & pepper to taste
  • ½ tsp. thyme
  • 1 small onion cut into thick wedges
  • 2 cloves garlic minced
  • ½ red bell pepper sliced
  • 15 oz. can diced tomatoes drained
  • ¼ cup white wine

Instructions

  • Rub the inside of the slow cooker with olive oil.
  • Rub the chicken with Dijon mustard and sprinkle with salt, pepper and thyme.
  • Place chicken in the bottom of the slow cooker.
  • Put the veggies and wine on top of the chicken.
  • Cook on high for 5-6 hours or on low for 7-8 hours.
  • If frozen, thaw in the fridge overnight.
  • Cook according to the directions in the recipe.
