Slow Cooker Cantonese Sweet and Sour Pork Chop

Ingredients

  • 2 lbs. pork chops boneless
  • 1 small onion sliced
  • 1 red pepper sliced
  • 1 green pepper sliced
  • 20 oz. pineapple chunks
  • ¼ cup brown sugar
  • 1 clove garlic crushed
  • ¼ tsp. ground ginger
  • 2 Tbs. cornstarch
  • ¼ cup cider vinegar
  • ¼ cup water
  • 1 Tbs. soy sauce
  • ½ tsp. salt

Instructions

  • Put the pork chops, onion, and peppers in the crockpot.
  • Drain the can of pineapple, reserving the juice.
  • Set the pineapple chunks aside for later.
  • Mix the juice with the rest of the ingredients and pour over the pork.
  • Cook on high for 4-5 hours or on low for 7-9 hours.
  • About a half hour before serving, stir in the pineapple chunks.
