Slow Cooker Black Bean Soup

Ingredients

  • ½ lb. black beans dried
  • 1 ham bone
  • 1 small onion diced
  • 1 small green pepper diced
  • 1-2 cloves garlic crushed
  • 3-3½ cups water
  • ½ tsp. kosher salt
  • black pepper to taste
  • ¾ tsp. chili powder
  • ¾ tsp. cumin
  • 3 Tbs. vinegar to be added at the end of the cooking time
  • ¼ cup red onion diced for serving
  • ¼-½ cup sour cream for serving

Instructions

  • Sort and rinse black beans.
  • Cover with water and let soak overnight.
  • Place ham bone in slow cooker.
  • Drain beans and add to slow cooker.
  • Add onion, green pepper, garlic, water, salt, pepper, chili powder and cumin.
  • Stir to combine. Cook on high 7-8 hours.
  • Remove the ham bone from pot.
  • Remove half of soup and place in a blender.
  • Blend until smooth.
  • Return to the slow cooker.
  • Stir in vinegar.
  • Serve with diced red onion and sour cream, if desired.
