Slow Cooker Beef Fajitas

Ingredients

For the fajitas:

  • 1 large onion sliced
  • 3 bell peppers any color, sliced
  • 1½-2 lbs. beef sliced thin and cut into strips
  • 1 packet fajita seasoning or use homemade
  • 12-16 corn tortillas for serving
  • 1 small head lettuce shredded, optional for serving
  • 2 tomatoes diced, optional for serving
  • 2 avocados diced, optional for serving
  • ½-1 cup cheddar cheese shredded, optional for serving
  • ½ cup sour cream optional for serving

For the fajita seasoning:

  • 3 Tbs. chili powder
  • tsp. garlic powder
  • ¾ tsp. onion powder
  • ¾ tsp. crushed red pepper flakes
  • ¾ tsp. dried oregano
  • tsp. paprika
  • tsp. ground cumin
  • 3 tsp. salt
  • teaspoon black pepper

Instructions

For the fajitas:

  • Place onions and peppers in the slow cooker.
  • Place sliced beef on top of the peppers and onions.
  • Sprinkle fajita seasoning over beef. Cook on high for 5-6 hours or low for 7-8 hours.
  • Serve in tortillas with any fixings you like.

For the fajita seasoning:

  • Mix together thoroughly and divide into three baggies.
  • This makes the equivalent of 3 commercial-sized packages.
