Slow Cooker BBQ Chicken Fajitas

Ingredients

For the chicken:

  • 1 lb. chicken breasts boneless, skinless and thinly sliced
  • 1 small onion thinly sliced
  • 1 cup barbecue sauce divided
  • 1 green pepper sliced into strips
  • ½ cup shredded cheddar for serving
  • 6-8 tortillas for serving

For the bbq sauce:

  • ¾ cup ketchup
  • 2 Tbs. yellow mustard
  • 2 Tbs. honey or brown sugar
  • salt to taste, optional

Instructions

For the chicken:

  • Add the chicken and onion to the slow cooker.
  • Pour ½ cup barbecue sauce over.
  • Cook on high for 3-4 hours or on low for 6-7.
  • Add in the sliced green peppers about a half hour before serving.
  • Serve in tortillas, topped with cheddar and additional ½ cup barbecue sauce.

For the bbq sauce:

  • Combine all ingredients and store in an air-tight container in the refrigerator
