Slow Cooker BBQ Chicken Fajitas

For the chicken:
- 1 lb. chicken breasts boneless, skinless and thinly sliced
- 1 small onion thinly sliced
- 1 cup barbecue sauce divided
- 1 green pepper sliced into strips
- ½ cup shredded cheddar for serving
- 6-8 tortillas for serving
For the bbq sauce:
- ¾ cup ketchup
- 2 Tbs. yellow mustard
- 2 Tbs. honey or brown sugar
- salt to taste, optional
For the chicken:
Add the chicken and onion to the slow cooker.
Pour ½ cup barbecue sauce over.
Cook on high for 3-4 hours or on low for 6-7.
Add in the sliced green peppers about a half hour before serving.
Serve in tortillas, topped with cheddar and additional ½ cup barbecue sauce.
