Slow Cooker BBQ Chicken Fajitas

Ingredients

For the chicken:

  • 2 lbs. chicken breasts boneless, skinless and thinly sliced
  • 1 large onion thinly sliced
  • 2 cups barbecue sauce divided
  • 2 green peppers sliced into strips
  • 1 cup shredded cheddar for serving
  • 12-16 tortillas for serving

For the bbq sauce:

  • cups ketchup
  • ¼ cup yellow mustard
  • ¼ cup honey or brown sugar
  • salt to taste, optional

Instructions

For the chicken:

  • Combine all ingredients and store in an air-tight container in the refrigerator.
  • Add the chicken and onion to the slow cooker.
  • Pour 1 cup barbecue sauce over.
  • Cook on high for 3-4 hours or on low for 6-7.
  • Add in the sliced green peppers about a half hour before serving.
  • Serve in tortillas, topped with cheddar and additional 1 cup barbecue sauce.

For the bbq sauce:

  • Combine all ingredients and store in an air-tight container in the refrigerator.
