Slow Cooker BBQ Chicken Fajitas

For the chicken:
- 2 lbs. chicken breasts boneless, skinless and thinly sliced
- 1 large onion thinly sliced
- 2 cups barbecue sauce divided
- 2 green peppers sliced into strips
- 1 cup shredded cheddar for serving
- 12-16 tortillas for serving
For the bbq sauce:
- 1½ cups ketchup
- ¼ cup yellow mustard
- ¼ cup honey or brown sugar
- salt to taste, optional
For the chicken:
Combine all ingredients and store in an air-tight container in the refrigerator.
Add the chicken and onion to the slow cooker.
Pour 1 cup barbecue sauce over.
Cook on high for 3-4 hours or on low for 6-7.
Add in the sliced green peppers about a half hour before serving.
Serve in tortillas, topped with cheddar and additional 1 cup barbecue sauce.
