Instant Pot BBQ Chicken Fajitas

For the chicken:
- 2 lbs. chicken breasts boneless, skinless and thinly sliced
- 1 large onion thinly sliced
- 2 cups barbecue sauce divided
- 2 green peppers sliced into strips
- 1 cup shredded cheddar for serving
- 12-16 tortillas for serving
For the bbq sauce:
- 1½ cups ketchup
- ¼ cup yellow mustard
- ¼ cup honey or brown sugar
- salt to taste, optional
For the chicken:
Add an additional 1 cup of barbecue sauce.
Add chicken and onion to the pressure cooker pot and pour the sauce over.
Set cook time for 15 minutes.
Do a quick pressure release
Serve in tortillas, topped with cheddar an additional 1 cup barbecue sauce.
