Chicken Florentine Pizza

For the alfredo sauce:
- ¼ cup butter
- 2 cups half & half
- 2 cups Parmesan cheese shredded
- 1-3 Tbs. unbleached all-purpose flour
- salt & pepper to taste
For the pizza:
- 2 whole-grain pizza crusts
- 4¼-4½ cups alfredo sauce
- 1-2 cups fresh spinach
- 3-4 cups grilled chicken sliced
- 2 Roma tomatoes sliced thin
- 2 cups mozzarella cheese shredded
For the alfredo sauce:
In a small saucepan, melt the butter over medium heat.
Whisk in half & half and heat for several minutes. Keep an eye on the heat so that the sauce doesn't boil.
When the sauce is hot, add the cheese by handfuls, whisking in. Allow the cheese to melt and turn down the heat to keep sauce hot, but not boiling.
Add flour 1 Tbs. at a time until sauce is as thick as you'd like. The sauce will thicken more as it cools.
For the pizza:
Spread Alfredo sauce on the crust and layer spinach, chicken and tomatoes on top.
Drizzle with the rest of the alfredo and sprinkle with cheese.
Bake 450° for 10-15 minutes.
