Ingredients

For the salad:

  • 12-16 cups mixed baby greens
  • 1 cup parmesan cheese freshly grated
  • 3-4 peaches thinly sliced
  • 1 cup pecan halves
  • ¾ lb. chicken tenders grilled and chopped

For the dressing:

  • ¼ cup olive oil
  • 3 Tbs. cider vinegar
  • 1 Tbs. dried minced onion
  • salt & pepper to taste

Instructions

For the salad:

  • In a large bowl, toss together the greens, cheese, peach slices, and pecans.
  • Top with chicken, if desired.
  • Add dressing to taste.

For the dressing:

  • Whisk together the olive oil, vinegar, onion, salt and pepper to make dressing.
