For the salad:
- 6-8 cups mixed baby greens
- ½ cup parmesan cheese freshly grated
- 1-2 peaches thinly sliced
- ½ cup pecan halves
- ⅓ lb. chicken grilled & chopped
For the dressing:
- 2 Tbs. olive oil
- 1½ Tbs. cider vinegar
- ½ Tbs. dried minced onion
- salt & pepper to taste
For the salad:
In a large bowl, toss together the greens, cheese, peach slices, and pecans.
Top with chicken, if desired.
Add dressing to taste.
