Instant Pot Health Booster Chicken Soup

Ingredients

  • 1 whole chicken cleaned
  • 15-30 cloves garlic minced or crushed, about 1½ bulbs
  • 1 Tbs. salt
  • 3-4 fresh thyme sprigs
  • 2-3 fresh rosemary sprigs
  • 1 tsp cayenne pepper
  • ground black pepper to taste
  • 8 cups chicken broth
  • 1 stalk celery chopped
  • 1 fennel bulb chopped
  • 1 red bell pepper chopped
  • 4 carrots chopped
  • 1 onion diced
  • ½ cup white wine optional
  • 6 cups water
  • 15 oz. diced tomatoes undrained

Instructions

  • Place all ingredients in the pressure cooker pot.
  • Set the manual cook time to 25 minutes at high pressure.
  • Let the pressure naturally release for 15 minutes.
  • Remove chicken from the pot. Take the meat off the bones, shred and return to the pot.
  • Season to taste with salt and pepper, then serve.
