- 3-4 chicken breasts on the bone
- 10-15 cloves garlic minced or crushed
- ½ Tbs. salt
- 1-2 fresh thyme sprigs
- 1 fresh rosemary sprig
- ½ tsp cayenne pepper
- ground black pepper to taste
- 4 cups chicken broth
- ½ stalk celery chopped
- ½ fennel bulb chopped
- ½ red bell pepper chopped
- 2 carrots chopped
- 1 small onion chopped
- ¼ cup white wine optional
- 3 cups water
- ½ 15 oz. can diced tomatoes undrained
Place all ingredients in the pressure cooker pot.
Set the manual cook time to 25 minutes at high pressure.
Let the pressure naturally release for 15 minutes.
Remove chicken from the pot. Take the meat off the bones, shred and return to the pot.
Season to taste with salt and pepper, then serve.
