Cornbread Pizza

For the pizza:
- ¾ cup cornmeal
- 6 Tbs. whole wheat flour
- ½ Tbs. baking powder heaping
- ¼ tsp. salt
- 1 egg
- 6 Tbs. milk
- ½ lb. ground sausage
- ¼ onion diced
- 12 oz. pizza sauce or use homemade
- 1 cup mozzarella cheese shredded
For the homemade pizza sauce:
- 15 oz. can peeled whole tomatoes
- ¼ Tbs. red wine vinegar
- ½ tsp. basil
- ¼ tsp. oregano
- ¼ tsp. garlic powder
- ⅛ tsp. black pepper
- salt to taste
For the pizza:
Brown the sausage and onion together in a skillet.
Drain and rinse under hot water to remove the extra grease.
Mix the dry ingredients together for the cornbread.
Stir in the egg and milk.
Spray a 9x9 casserole dish with cooking spray.
Spread the cornbread batter in the dish.
Bakeat 375° for 5 minutes.
Pull it out of the oven and spread with the sauce, sausage and cheese.
Bake another 15-20 minutes or until the crust is done.
For the homemade pizza sauce:
Pour the tomatoes and all the juice from the can into a blender.
Quickly blend just to chop the tomatoes.
Sauce shouldn't be smooth.
Pour from the blender into medium-sized bowl.
Stir remaining ingredients in by spoon.
Any extra sauce can be frozen.
