Cranberry Muffins with Orange Glaze

flour

salt

baking powder
½
cup
butter
softened
¼
cup
sugar
2
eggs
¾
cup
milk

tsp.
vanilla
1
cup
cranberries
coarsely chopped
½
cup
orange marmalade
Instructions
For the muffins:
Stir the flour, salt and baking powder in a large bowl.
With an electric mixer, cream the butter and sugar.
Add the eggs, vanilla and milk and mix until well blended.
Stir wet ingredients into dry ingredients with a spoon.
Stir gently, just until combined.
Fold in the cranberries.
Fill greased muffin pan with the batter and bake at 400° for 15-20 minutes.
For the orange glaze:
Melt orange marmalade in the microwave in a small bowl.
This will only take 20-30 seconds, depending on the power of the microwave.
You don’t want to make it too hot, just melted.
Dunk the top of each muffin in the marmalade to coat it with the glaze.

Notes:
These can be made ahead and frozen. Thaw on the counter overnight and reheat in the microwave, if desired.
