Mix the oil, brown sugar, egg, water and vanilla with a mixer.
In a separate bowl, stir together the flour, dry milk, salt, baking soda, cinnamon, and quick oats.
Add to the wet ingredients and mix until well blended.
Fold in the dried cranberries.
Grease and line a 9x9 pan with baking parchment.
Press the batter into the prepared pan.
Bake at 350° for 20- 30 minutes or until set and golden brown.
Let cool completely before slicing.
Notes
Notes: These can be made ahead and frozen. Wrap individual servings in plastic wrap and place in a large ziplock bag to freeze. Thaw on the counter overnight.
