Cranberry Orange Oatmeal Cups

Ingredients

  • 2 cups old fashioned oats
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • ½ tsp. salt
  • cup maple syrup
  • 1 cup milk
  • 1 cup orange juice
  • 1 egg lightly beaten
  • ½ cup dried cranberries

Instructions

  • Toss together oats, baking powder, cinnamon and salt in a bowl.
  • In another bowl, whisk together the syrup, milk, orange juice, and egg.
  • Pour the wet mixture over the oats and stir to combine Divide evenly between wells of a muffin tin, lined with cupcake papers or sprayed with nonstick spray.
  • Sprinkle dried cranberries evenly over the oatmeal. Press down lightly.
  • Bake at 350° for 25-30 minutes or until set.

Notes

Notes: This can be made ahead and reheated in the microwave. To freeze, place cooked cups on a baking sheet in the freezer for two hours and then transfer to a ziplock bag. Thaw in refrigerator overnight.
