Cranberry Pecan and Mandarin Salad with Chicken

For the salad:
- 2 bags baby spinach
- ½ cup dried cranberries
- ½ cup pecan pieces
- 1 cup mandarin oranges
- ½ red onion sliced
- 1 lb. chicken breast cooked and diced, optional
For the raspberry vinaigrette:
- 6 Tbs. seedless raspberry jam
- 1⅓ cup oil
- ⅔ cup red wine vinegar
- salt & pepper to taste
For the raspberry vinaigrette:
Warm the jam in the microwave for a few seconds until it become slightly melted.
Place all ingredients in a container with a tight-fitting lid, a mason jar works well for this.
Shake to combine the ingredients.
Pour over salad, to taste, and toss.
