Cranberry Pecan and Mandarin Salad with Chicken

Ingredients

For the salad:

  • 2 bags baby spinach
  • ½ cup dried cranberries
  • ½ cup pecan pieces
  • 1 cup mandarin oranges
  • ½ red onion sliced
  • 1 lb. chicken breast cooked and diced, optional

For the raspberry vinaigrette:

  • 6 Tbs. seedless raspberry jam
  • 1⅓ cup oil
  • cup red wine vinegar
  • salt & pepper to taste

Instructions

For the salad:

  • Toss together the spinach, cranberries, pecans, oranges and red onion.

For the raspberry vinaigrette:

  • Warm the jam in the microwave for a few seconds until it become slightly melted.
  • Place all ingredients in a container with a tight-fitting lid, a mason jar works well for this.
  • Shake to combine the ingredients.
  • Pour over salad, to taste, and toss.
