Rustic Slow Cooker Irish Potato and Cabbage Soup

Ingredients

  • 2 tsp. olive oil
  • 1 onion chopped
  • 2 cloves garlic crushed
  • 6 medium potatoes scrubbed and chopped
  • 4 carrots chopped
  • ½ head cabbage chopped
  • 1 link smoked sausage sliced
  • 8 cups chicken broth
  • 2 bay leaves
  • 1 tsp. thyme
  • salt & pepper to taste
  • tsp. sugar
  • 1 Tbs. cider vinegar optional

Instructions

  • Place all ingredients, except cider vinegar, in the slow cooker crock and cook on high 5-6 hours or low 7-8 hours.
  • No need to cook onion and garlic before adding to slow cooker.
  • Stir in cider vinegar, if desired.
