Rustic Instant Pot Irish Potato and Cabbage Soup

Ingredients

  • 1 tsp. olive oil
  • 1 small onion chopped
  • 1 clove garlic crushed
  • 3 medium potatoes scrubbed and chopped
  • 2 carrots chopped
  • ¼ head cabbage chopped
  • ½ link smoked sausage sliced
  • 4 cups chicken broth
  • 1 bay leaf
  • ½ tsp. thyme
  • salt & pepper to taste
  • 1 dash sugar
  • ½ Tbs. cider vinegar optional

Instructions

  • Hit the sauté button and cook onion and garlic in the olive oil until soft.
  • Add remaining ingredients, except cider vinegar, to the pot and set cook time for 15 minutes.
  • Do a quick pressure release.
  • Stir in cider vinegar.
