Ingredients

For the turkey and vegetables:

  • 1-1½ cups chicken cooked and chopped
  • 1 cup mixed vegetables cooked
  • ¾ cups milk
  • ½ 10 oz. can cream of chicken soup or use homemade
  • 2-3 baking potatoes baked

For the homemade soup:

  • ¼ cup butter
  • ¼ cup unbleached all-purpose flour
  • ¾ cup milk
  • ¾ cup chicken broth

Instructions

For the turkey and vegetables:

  • Place chicken and vegetables in a large pan.
  • Stir milk and soup together and pour into pan.
  • Cook over medium heat, stirring often until hot through.
  • Top baked potatoes with chicken and vegetables.

For the homemade soup:

  • Melt butter in a pan.
  • Whisk in flour and cook, whisking constantly, for a minute or two until golden.
  • Slowly whisk in milk and broth and bring to a boil, stirring frequently.
