Crustless Ham, Asparagus and Swiss Quiche

Ingredients

  • 1 tsp. olive oil
  • ½ cup ham cooked and diced
  • ½ onion chopped
  • ½ bunch asparagus cut in 1” pieces
  • ¾ cup Swiss cheese shredded
  • ½ cup half and half
  • 2 eggs
  • ¼ tsp. salt

Instructions

  • Preheat the oven to 400°.
  • Heat olive oil in a skillet and cook ham, onion and asparagus until the onion is soft.
  • Spoon half of the mixture into a greased 8” pie plate.
  • Layer half the cheese over, then repeat the layers.
  • Whisk together milk, eggs, and salt in a bowl.
  • Pour over ingredients in the pie plate.
  • Bake 25-30 minutes, until a knife comes out clean.
  • Let stand 10 minutes before serving.
