Ingredients

  • 1 small cucumber
  • 2-3 tomatoes
  • 1 small red onion thinly sliced
  • ½-1 Tbs. olive oil
  • ½-1 tsp. red wine vinegar
  • ½ tsp. salt
  • & pepper to taste

Instructions

  • Chop the cucumber and tomatoes into bite-sized pieces.
  • Mix together in a bowl with red onion slices.
  • Drizzle a stream of olive oil over the veggies and sprinkle on the red wine vinegar.
  • Add salt, stir, and adjust seasonings to taste.
