- 1 small cucumber
- 2-3 tomatoes
- 1 small red onion thinly sliced
- ½-1 Tbs. olive oil
- ½-1 tsp. red wine vinegar
- ½ tsp. salt
- & pepper to taste
Chop the cucumber and tomatoes into bite-sized pieces.
Mix together in a bowl with red onion slices.
Drizzle a stream of olive oil over the veggies and sprinkle on the red wine vinegar.
Add salt, stir, and adjust seasonings to taste.
