Easy Apple Crumb Pie

Ingredients

  • 1 unbaked pie shell or use homemade
  • 4 cups sliced apples
  • ½ cup sugar
  • tsp. apple pie spice
  • 2 Tbs. flour or cornstarch
  • 2 Tbs. cream or half & half
  • 1 cup unbleached all-purpose flour
  • ½ cup butter softened
  • ½ cup brown sugar

For the homemade pie crust:

  • 1 cup pastry flour or white whole wheat flour
  • ½ cup (or less) butter
  • 1 tsp. salt
  • 2 Tbs. + 1 tsp. water

Instructions

  • Preheat oven to 450°.
  • Stir apples, sugar, pie spice, cornstarch or flour and cream together in a bowl.
  • Mound apples in pie shell.
  • In another bowl, stir flour and brown sugar together.
  • Cut in butter with a pastry blender or fork to make crumbs.
  • Top pie with crumbs.
  • Bake at 450 for 15 minutes.
  • Reduce heat to 350 and bake about 20 more minutes or until apples are tender.

For the homemade pie crust:

  • I always use butter in my crusts, and I soften it a bit. Notice that you’ll use a bit less than ½ cup.
  • I use about ½ Tbs. less.
  • The basic directions are to cut the butter into the flour and salt.
  • Add the water and stir with a fork until it forms a ball.
  • Roll it out and put it in the pie pan.
