Easy Slow Cooker Meatball Subs

For the subs:
- 1 lb. homemade meatballs
- ½ 24 oz. spaghetti sauce or make homemade
- ½-1 cup mozzarella cheese shredded
- 3-4 buns whole wheat sub
For the meatballs:
- 1 lb. ground beef extra lean
- 1 cup panko bread crumbs or oatmeal that’s ground in the blender or food processor.
- 1 egg
- ½ Tbs. Worcestershire sauce optional
- salt & pepper to taste
For the spaghetti sauce:
- 15 oz. peeled whole tomatoes
- ¼ Tbs. red wine vinegar
- ½ tsp. basil
- ¼ tsp. oregano
- ¼ tsp. garlic powder
- ⅛ tsp. black pepper
- salt to taste
For the meatballs:
Mix all ingredients together & form small 1 inch balls.
Place on a cookie sheet, with sides. Bake at 350° for 20-25 minutes.
**Look for a spaghetti sauce in the Natural Foods section of your grocery store if you do not wish to make your own.
For the spaghetti sauce:
Pour the tomatoes and all the juice from the can into a blender.
Quickly blend just to chop the tomatoes.
Sauce shouldn't be smooth.
Pour from the blender into medium sized bowl.
Stir remaining ingredients in by spoon.
To make this a 15 minute meal, cook in a pressure cooker, or make the meatballs and sauce ahead of time and freeze!
If not using homemade sauce, freeze the remaining half jar of sauce for future use.
Any extra sauce can be frozen.
